Felix Gabillet is our newest recruit in the winery on a 6 month contract, his role is Assistant Winemaker, working closely with Antoine and Herve.
Felix is a keen traveller with a love for food and cooking and he grew up in the Loire Valley.

Felix joined us for our Harvest in October 2015, and loved Hambledon so much that he returned to work here in January!
Felix will be with us until the late Summer and is already a very well-established and highly valued member of the Hambledon Winemaking team. We have quizzed Felix on his favourites, including some of his preferred food, drinks and books.
Favourite dish: Sweetbread with baked potato. Felix cooks this recipe with his father over an open fire, whilst enjoying a bottle of Pinot Noir. Here is another recipe for sweetbread.
Favourite wine: Loire Valley Wine (Felix says this wine is his favourite as it represents his roots and where he comes from.)
Favourite Drink: Gin and Tonic
Favourite Cake: Cherry Clafoutis (This is Felix’s favourite cake, as his grandmother often bakes it for him.)
