There was great excitement in the winery a few days ago when we used our brand new semi-automatic disgorging and dosing line for the first time since it was installed on February 10th (I’m afraid our winemaking team is just a bunch of typical boys who enjoy new toys!)
The disgorging line was installed by Didier Pierson, the first Champenois to move over to the dark side and plant Champagne vines in England in 2005, and we were delighted that he was able to join us in person to help with the disgorgement and dosage of the Mill Down 2010. It was a real honour to have him on board, even if he was rather reticent to pose for photographs…..
To add to the general party mood, our new branded Mill Down boxes arrived later that same day.
We’ve also just received our new customised corks, having completed a number of trials to find the best closure, and are now turning our attention to choosing wire cages for Mill Down.
