The replanting of our
Vineyard in 2005 with vines of the three noble varieties used in Champagne
production was carefully designed to give our wine makers a broad palette from
which to create.
Chardonnay to deliver crisp elegant finesse, Pinot Noir to deliver richness and flavour, and the rigour of Pinot Meunier to provide breadth to the wines.
We carefully selected 21 different clone and rootstock combinations to create a range of flavours and complexity for our wines. Our rootstocks have been selected for their love of chalk based soils, and our clones for their ranges of flavours with a balance of acidities and sugars.
Our South East facing chalk slope gives some protection from the prevailing South Westerly winds, whilst also increasing the concentration of the sun's light through the ripening period.
Finally, the beauty of our valley in the Hampshire downs provides an inspiring location producing fine English fizz.
